Ingredients
6-8 Jalapeño Poppers
1 Can shredded cooked chicken breast (Hormel Premium Chicken Canned is 0 Points)
1 or 2 Chopped Scallions
1 Cup plain Fat Free Greek yogurt
4-6 Tbs. Buffalo Sauce
1/4 tsp garlic powder
1 Tbsp. fresh-squeezed lime juice
sea salt & freshly ground pepper to taste (1/8 teaspoon each)
Cut your Jalapeño Poppers in half lengthways and scoop out all the seeds (unless you like some heat)
Mix all the other ingredients together in a bowl
Spoon filling into poppers
Bake at 350 for about 20-25 minutes. (air fryer is good for this!)
Dig in!
