Buffalo Chicken Poppers

Ingredients

  • 6-8 Jalapeño Poppers

  • 1 Can shredded cooked chicken breast (Hormel Premium Chicken Canned is 0 Points)

  • 1 or 2 Chopped Scallions

  • 1 Cup plain Fat Free Greek yogurt

  • 4-6 Tbs. Buffalo Sauce

  • 1/4 tsp garlic powder

  • 1 Tbsp. fresh-squeezed lime juice

  • sea salt & freshly ground pepper to taste (1/8 teaspoon each)


  1. Cut your Jalapeño Poppers in half lengthways and scoop out all the seeds (unless you like some heat)

  2. Mix all the other ingredients together in a bowl

  3. Spoon filling into poppers

  4. Bake at 350 for about 20-25 minutes. (air fryer is good for this!)

  5. Dig in!
